3 Ways to Revive Stale Bread
Three quick and straightforward methods for preserving stale bread. There are few things that can compare to the taste of a freshly made loaf of bread that has just come out of the oven. It’s also difficult to consume a whole loaf of bread when it’s still warm from the oven. Keeping bread fresh is a losing struggle; from the time it is finished baking, it begins to lose moisture through a process known as starch retrogradation, which is short for starch degradation. During the initial baking procedure, the starch began to gelatinize when the temperature reached 150 degrees Fahrenheit and began to absorb moisture.
Throughout the process of recrystallization, the starches lose the moisture that had been trapped in them during the baking process.
Simply warming your bread will allow the starches to re-gelatinize and restore the soft feel that we have learned to associate with “fresh.” We’ll go through three alternative techniques for rehydrating stale bread in this Instructable.
Step 1: Things You’ll Need
The following will be required to assist you in rescuing your stale bread:
- A stale loaf of bread, paper towels, aluminum foil, 1-2 celery stalks, an oven or microwave, and a few minutes of your time.
Step 2: Microwave Method
This procedure is by far the quickest and most effective method of softening stale bread, and the results are also the most long-lasting. Steps:
- Wet a strip of paper towel that is long enough to thoroughly cover your loaf of bread and set it aside (or the portion that you intend to eat). This may be accomplished by soaking your paper towel in cold water and then squeezing out as much water as possible

Step 3: Oven Method
Although it takes longer to soften the bread in the oven than it does in the microwave, it is just as effective as the latter. Steps:
- Preheat the oven to 300 degrees Fahrenheit (148 degrees Celsius). Prepare an aluminum foil sheet large enough to cover and wrap your bread loaf or slice
- Wrap your bread in aluminum foil, taking care to ensure that it is well covered
- Placing your foil-wrapped bread in your preheated oven for 5-20 minutes should be plenty. Warming a slice or small roll for less time (approximately 5 minutes) than warming and remoistening a larger or thicker loaf of bread (approximately 20 minutes) is the rule of thumb
- However, if you are heating and remoistening a larger or thicker loaf of bread (approximately 20 minutes), the rule of thumb is to heat it for less time (approximately 5 minutes). Remove your bread from the oven and set it aside to cool in the foil wrapper as it cools. You’ll want to remoisten your bread while it’s still wrapped in foil so that it doesn’t shed any of the moisture it has retained as steam as it cools. Serve and consume as soon as the food is cold enough to handle.
If your bread is really dry, I recommend dabbing a couple drops of water along the length of the bread loaf with your fingertips every now and again. This will aid in the re-incorporation of moisture into your bread in addition to just warming and softening it. If you do opt to use water, be careful not to oversaturate your bread loaf, or you will end up with mushy bread as a result. Start with a tiny amount; you may always add more later.
Step 4: Celery Method
The celery approach is superior for remoistening packages of sliced bread; however, it needs a little bit of foresight as you’ll be letting it reabsorb moisture overnight. Steps:
- Place a celery stalk into the bread loaf bag
- Seal the bag. Bags should be sealed or closed off. Place the bread bag with the celery stalk back into the refrigerator and allow it to rest for several hours before using. I’ve found that letting it rest in the fridge overnight yields the greatest results. Remove the celery stem from the bag and set it aside. By this stage, the bread should be fairly dry and tough, having lost the majority of its liquid content.
Step 5: Beyond Reviving
It is possible that your bread has dried out past the point where it can be remoisten easily or reasonably. If this is the case, consider repurposing your bread in various ways, such as making bread crumbs, croutons, thickening a soup, or feeding the birds.
