This recipe for Maine Lobster Rolls will bring a flavor of coastal New England to your table! See for yourself how fresh, basic ingredients transform these lobster salad sandwiches into a summertime favorite that everyone will want to eat. I made a commitment to myself before I departed for my recent vacation to Maine that I would consume all of the lobster that I could while I was there. I’m pleased to report: The mission has been completed. As a result of my posting a photo of the lobster rolls we had on Instagram, I had several requests for the recipe for Maine Lobster Rolls.
It also meant that I would have to consume lobster rolls once more.
Here, I’ll go through everything that goes into making a typical Maine Lobster roll, including everything you’ll need (and what you’ll want to leave out) to have a genuine New England experience when eating one.
A few simple ingredients and cooking techniques can transport the flavors of Maine’s magnificent shoreline to your dining table, no matter where “home” is for you.
What is a Lobster Roll?
Lobster Rolls are New England-style sandwiches that are made by piling pieces of fresh lobster flesh over split-top hotdog buns that have been buttered and griddle-fried. The sound of the beach, salty breezes, and sand between my toes are all brought to me by a single taste of this treat. It’s like having summer in a bun. The way in which the lobster is prepared distinguishes the many varieties of New England Lobster Rolls. Recipes can be divided into two basic groups, according to the lingua franca of the culinary world: Connecticut-style recipes and Maine-style recipes.
Connecticut vs Maine Lobster Rolls
Maine Lobster Rolls are made by cooling boiled lobster flesh and lightly dressing it with mayonnaise before rolling it up. The lobster salad is served cold, heaped high on a hotdog bun that has been griddled. (On certain menus, the lobster may be served unadorned, with a little mayonnaise put into the bread in its place.) The Lobster Rolls from Connecticut are served hot. The lobster flesh is seasoned with extracted butter and mounded onto a bun that has been made in a similar manner. Connecticut Lobster Rolls are made without the use of mayonnaise.
I’ve eaten in restaurants in Connecticut where the mayo-based lobster roll (also known as a “lobster salad roll”) was on the menu, as well as at establishments in Maine where they were served with butter.
How to Make a Classic Maine Lobster Roll
Lobster rolls in New England, whether they are made in Connecticut or Maine, are all about the lobster. Their flavor is enhanced by the use of only a few ingredients, which allows the sweet, delicate lobster to take center stage.
In order to create Maine lobster rolls, I use fresh lobsters weighing around 1-1/2 to 1-3/4 pounds, depending on size. This will give around 1 pound of lobster flesh in total, which will be enough for 4 lobster rolls.
How to Cook Live Lobsters
Lobster rolls in New England, whether they are made in Connecticut or Maine, are all about the lobster, of course. Their flavor is enhanced by the use of only a few ingredients, which allows the sweet, delicate lobster to take centre stage. Maine lobster rolls are made with fresh lobsters that weigh around 1-1/2 to 1-3/4 pounds. For 4 lobster rolls, this will provide around 1 pound of lobster flesh altogether.
I’ve cooked the lobster meat! What’s next?
After you’ve taken the tail and claw flesh from the shells, chop it into portions that are around the same size as the shells. If I’ve been successful in removing the claws in one piece, I like to leave them in place and use them to put over the top of each lobster roll as a garnish. It makes for a visually appealing display. To make Maine lobster rolls, gently mix the lobster flesh with a good-quality mayonnaise until the lobster meat is coated. Because the lobster is the primary attraction here, you only need a small amount of mayonnaise to bind the lobster salad together without making it too heavy.
Aside from mayonnaise, every single component of a Maine lobster roll is up for discussion.
- Adding chopped celery to the lobster salad is a popular recipe addition that adds crunch and flavor to the dish. The addition of lettuce to the bread before mounding the lobster salad is a controversial matter
- Nonetheless, I prefer my lobster rolls without it. But I don’t mind a tiny leaf or two of Boston lettuce every now and again. I’m not a fan of lobster rolls that are light on the lobster and seem artificially bloated because of the lettuce used to assemble them. To add to the misery, ingredients that are wonderful with lobster but do not feature in a typical Maine lobster roll include capers, Dijon mustard
- And just about any other ingredient other than those listed above.
Lobster. Mayonnaise. Hot Dog Bun that has been buttered and grilled. Perhaps a sprinkling of celery and/or lettuce. That’s all there is to it for aficionados of the Maine lobster roll!
Tell me More About the New England Hot Dog Buns
Split-top hotdog buns are the traditional breading for Maine Lobster Rolls, and they are still used today. The authenticity of your at-home experience will be enhanced if you can find the New England-style buns that also have flat sides for toasting, as described above. When toasted on the griddle, the flat sides of New England hotdog buns toast particularly effectively, resulting in a buttery, crispy outside and a soft inside. While my local grocery shop in New Jersey carries split-top hotdog buns, it can be tough to obtain hotdog buns with flat sides in this part of the country.

Serving these Maine Lobster Rolls with lightly-seasoned French fries or kettle chips and coleslaw is something I look forward to when I’m near the beach. However, I normally start with the fries or chips that come with a lobster roll, rather than the lobster roll itself. I’ve also seen them served with dill pickles. Serve your lobster rolls with iced tea or a cool beer, and you’ll be in heaven. Beers with witbiers or witbier-style beers, like as Allagash White (also from Maine) and Hoegaarden White, are among my favorite combinations.
