Cajun Bundt Cake Recipe

In honor of my grandmother’s favorite recipe book, I’m sharing her recipe for Crazy Delicious Cajun Bundt Cake. When Sunday comes along, have you ever think to yourself, “Thank God Jesus, that week is finally over!”? I certainly have. For the most part, that describes my feelings for the whole month of July. Thank you, Jesus, for bringing that MONTH to an end. Between the heartbreak in our community as a result of the senseless shootings, health concerns, and guiding my father through a 30+ year delayed annulment (I could go on and on about how ridiculous I think THAT process is), I’m looking forward to saying goodbye to July and crossing my fingers, toes, and elbows that August will be less dramatic than the previous months.

  2. And, despite the fact that I was aware that my illness was not life threatening, I was terrified.

With little regard for the consequences of her actions, she was determined to achieve everything she set her mind to.

“Aimee, you did the best you could at the time,” she would always say to me.

Seeing her handwritten remarks on the pages of her beloved ADK cookbook and feeling an incredible sense of pride and tranquility washed over me, and it provided me with the motivation to get back into the kitchen.

In this recipe, I made some adjustments, mostly due to the fact that when you bake in a 13×9 baking dish, it’s nearly impossible to photograph it in a way that does the cake credit, no matter how great it may taste.

When I started putting the frosting together, everything seemed to be going well.

Which made me wonder why I hadn’t been clever enough to realize that I shouldn’t have cooked the cake in a bundt pan when the recipe called for putting the frosting on top instead of baking it.

As a result, because I was bundting, I only drizzled half of the frosting onto the cake and served the remaining icing warm beside the cake in case anyone wanted to pour more on top.

This dessert is delicious. This Cajun Bundt Cake is insanely delicious. Y’all. I’m just at a loss for words when it comes to describing it properly. Moist, delectable, rich, and decadent. All of these things are true.

  • 3 eggs, 1 big can (20 ounces) crushed pineapple, 2 cups all-purpose flour, 1 1/2 cups sugar, 1/2 teaspoon baking soda, sprinkle of salt, 1 1/2 teaspoon baking soda The icing consists of 1 cup sugar, 1 stick butter, 1 (5-ounce) can Pet milk (evaporated milk), 1/2 teaspoon vanilla extract, 1 cup nuts, chopped, and a cup of coconut.
