- Next, add the water and flour mixture to the pan. Continue to cook for another 5 minutes after stirring. One of the pie crusts should be rolled out and cut into squares. Place the squares in an 8×11-inch baking dish and pour in the cobbler mixture
- Bake for 30 minutes. The leftover crust should be placed on top of the cobbler. Brush the top of the cobbler with the remaining cobbler filing (which was left in the pot). Bake the cobbler for 35-40 minutes at 350 degrees Fahrenheit. Allow for cooling

- 1 teaspoon pure vanilla essence

For the Pie Crust:
- Two and a half cups all-purpose flour
- Two teaspoons granulated sugar
- One teaspoon salt
- One cup very cold unsalted butter, cut into cubes
- Two sticks of butter 13 cup extremely cold water
- 1 egg beaten with 1 teaspoon of water
- Ground cinnamon can be used as a garnish.
For the Filling:
- Remove the peaches from two of the cans and place them in a big saucepan with the rest of the ingredients. Using a large saucepan over medium heat, melt the remaining can of peaches with the light syrup, along with the butter, until all of the ingredients are completely melted together. Once the butter has completely melted, add the sugar, cinnamon, nutmeg, and vanilla extract and bring the peaches to a boil, stirring occasionally. Once the peach syrup is boiling, take 3 tablespoons of it from the main saucepan and place it in a small basin. Whisk the flour into the peach syrup in a small bowl until it is thoroughly incorporated, making a slurry, then stir it into the saucepan of peaches. After 30-40 minutes, or until the syrup has thickened and coated the back of a spoon, remove from heat and set aside to cool down and thicken more while you prepare the pie crust.
For the Pie Crust:
- In a medium-sized mixing basin, whisk together the flour, sugar, and salt until well combined
- Once you’ve done so, add the butter cubes to the flour mixture and, using a pastry cutter, cut the butter into the flour mixture until different sized crumbs form
- Slowly incorporate the cold water into the flour mixture until a ball of dough forms in your hands. Start with a 12 cup measuring cup and add extra water if necessary. Bring the dough together as fast as possible by kneading it quickly. Don’t be concerned if there is some flour left in the bowl
- This is normal. Remove the dough from the bowl, divide it into two halves, and roll each section into a ball. To rest, cover each ball with plastic wrap securely and store it in the refrigerator for 35-45 minutes.
- Preheat the oven to 375 degrees. Remove the dough from the refrigerator and sprinkle a little flour on a work surface or clean counter before placing the dough on it. Unwrap one of the dough balls. Making use of a rolling pin, swiftly spread out the dough to about 13 inch thickness and press it into the bottom and up the sides of a 9×13 inch baking pan

- 212 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 12 cup (1 stick) COLD butter (chopped into pieces)
- 12 cup COLD butter-flavored shortening
- 12 cup cold water (if the dough is still too dry, add more cold water a tablespoon at a time)
- 12 cup cold water (if the dough is still too dry, add more cold water a tablespoon at a time The Peach Filling consists of 2 (26 oz cans) sliced peaches, 1/4 cup sugar, 6 tablespoons butter, 1 teaspoon lemon juice, 1 teaspoon cinnamon, 1 pinch nutmeg, and 1 teaspoon ground nutmeg. To make the Cinnamon-Sugary Topping, combine 1 tablespoon sugar, 1 tablespoon brown sugar, and 1-2 tablespoons cinnamon in a mixing bowl.
- Preheat the oven to 375 degrees Fahrenheit. Lightly butter a deep dish pie plate with a 9-inch diameter. Remove from consideration

Pour the peaches into the other can after draining it. Combine the sugar, butter, lemon juice, cinnamon, and nutmeg in a mixing bowl. Stir constantly over medium heat until the sugar has completely dissolved and the liquid has become syrupy. Remove from consideration
- Divide the refrigerated pie crust into two equal-sized balls and chill for at least 30 minutes. One for the bottom crust and another for the top crust
- Two for the top crust. A floured surface is used to roll out a ball until it is approximately 1/8 inch thick. In a deep dish pie pan, press the dough into the pan. To make the cinnamon-sugar mixture, combine the ingredients and sprinkle some across the bottom crust. Using a slotted spoon, place the peaches on top of the cream. Pour a small amount of the syrup juice over top and adjust the sweetness to your desire. (I find that 1/2 cup is plenty.) To construct the lattice top crust, roll out the second ball of dough until it is long enough to be cut into strips that will stretch from one end of the pie pan to the other end of the pie pan. Cut around 8-10 1-inch pieces from the fabric. Strips should be laid up in a crisscross fashion on top of the peaches, with their ends pressed into the pie shell rim Sprinkle the pie with additional cinnamon sugar mixture after placing a few thin slices of butter on it (optional). Bake for 35-45 minutes, or until the top is golden brown. Allow for around 15 minutes of resting time before serving the pie.
