What is Banoffee Pie?
The Hungry Monk restaurant in East Sussex, England, was the inspiration for the original creation. I’ve included a link to the original recipe below because I feel it is important to give credit where credit is due to the individual or people who created the meal initially. I prepared this specific pie to bring to a neighborhood block celebration (where there would be a lot of youngsters), so I left out the coffee in the cream. Essentially, a Banoffee (or Banoffi) Pie is a no-bake caramel, banana, and (coffee) cream pie that doesn’t even require a recipe: it’s as simple as that!

Directions Pour the contents of the can into the top of a double-boiler pan and cover with a tight-fitting lid. Place the pan over a pot of boiling water. Reduce heat to low and cook for 40 to 50 minutes, stirring regularly, or until the sauce is thick and caramel-colored. Remove the pan from the heat. Beat until the mixture is smooth. TO USE CARAMEL FLAVORED CONDENED MILK OR DULCE DE LECHE: open the can or jar and use the product in its original form. Lemon juice should be squeezed over the banana slices before serving.

Next, whisk the cream until it is stiff, and depending on how much you want to use, pipe a decorative border around the outside of the pie or use it to completely cover the caramel with cream.
It’s a little messy, but it’s well worth it for the flavor!
