  • 6 tablespoons unsalted butter
  • Fine sea salt and freshly crushed black pepper
  • A sprinkle of chopped fresh parsley or thyme for garnishing is optional
  • Pour 1 1/2 teaspoons olive oil into a big (oven-safe, so you don’t have to wash a dish!) pan and heat over medium high heat until hot. Cook, stirring regularly, for approximately 1 minute after adding the garlic cloves and finely diced onion. Cook for another 2-3 minutes, or until the vegetables are softened, before adding the steak. Increase the heat to high and cook until the beef is well browned and cooked through. Cook, breaking up the steak as it cooks, until the beef is browned and cooked through. If there is an excessive amount of grease, drain out the extra fat before cooking. After you’ve added the flour, heat for an extra minute to get rid of the flour taste. Turn down the heat to medium-high and stir in the frozen peas or corn, can of diced tomatoes, tomato paste, beef stock, grape juice, beef bouillon cube, Worcestershire sauce, dried thyme, and 2 bay leaves. Remove from the heat, cover, and place in the refrigerator until you are ready to bake. Make it in the morning and assemble it before supper (this is my preferred method). If you are preparing it right away, leave it in the fridge until the potatoes are done (you want the mixture to chill for as long as possible so that the layers stay separate during baking, 15-20 minutes at the very least). To bake in an oven-safe pan, transfer the mixture to a 2 quart oven-safe baking dish. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Peel and cube the potatoes into golf-ball-sized chunks when they have been peeled and cubed. Place the ingredients in a strainer and rinse under cold water until the water that comes out is clear. Fill a big saucepan halfway with cold water and set aside. Stir in 1 tablespoon fine sea salt and 1 bay leaf until well combined, then bring to a boil. Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender. The potatoes should be drained in a sieve once they have been readily punctured to ensure that all of the excess liquid is removed. Allow for approximately 3 minutes of drying time. Remove the bay leaf and set aside while the potatoes are drying in the sieve. While the potatoes are drying, combine the heavy cream, sour cream, and butter in a large saucepan. Melt over low heat, stirring constantly, until completely melted. While the potatoes are still hot, run them through a ricer and place them directly on top of the butter/sour cream combination to finish cooking. Stir constantly with a wooden spoon until the mixture is smooth. Season with salt and pepper to taste (I use approximately a half teaspoon of salt and a quarter teaspoon of pepper). Cover with plastic wrap and store in the refrigerator until you’re ready to construct the pie! Alternatively, spread these mashed potatoes on top of the pie in a uniform layer
  • Press a fork into the surface of the potatoes to make markings. Bake for 25-30 minutes, or until the potatoes are golden brown and the edges are bubbling, at 350°F. Drizzle with the remaining 1/2 tablespoon olive oil before removing from the oven. Broil the potatoes for 1-2 minutes over high heat to crisp up the very tops of the potatoes! After removing the pan from the heat, sprinkle with fresh thyme or fresh parsley if preferred. Serve when still hot

Succulent pork chops with pan sauce are a delicious option for meat and potato lovers both.

Ingredients

  • 1 pound of lamb (or beef)
  • 3 tablespoons olive oil
  • 1 cup diced carrots
  • 2 cloves minced garlic
  • 1 small onion
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 cup frozen green peas
  • 1 cup whole kernel corn
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all purpose flour 1 cup chicken or beef broth
  • 12 teaspoons salt
  • 12 teaspoons black pepper
  • Parsley

Optional in Meat Mixture

  • Yukon gold potatoes, peeled
  • 14 cup water (from the potatoes being cooked)
  • 1 stick unsalted butter, melted
  • 12 cup heavy cream
  • 12 cup sour cream
  • 1 tsp salt
  • 14 tsp black pepper

Instructions

  1. In a large pan, saute the oil, onions, carrots, rosemary, thyme, and garlic over medium heat for 1-2 minutes, or until the vegetables are soft. Immediately add the steak and simmer for another 5-7 minutes, turning periodically, until the beef is cooked through
  2. Reduce the heat to medium-low and stir in the Worcestershire sauce, salt, pepper, green peas, and corn until everything is heated through. If preferred, add the tomato paste at this point and thoroughly mix everything together
  3. Add in the flour and mix until it is completely dissolved
  4. Pour in the chicken broth and whisk to mix, then reduce the heat to medium and simmer for another 5 minutes, then remove from the heat and set aside
  5. Preheat the oven to 400 degrees Fahrenheit.

For Mashed Potato Topping, use a fork.

  1. Bring a large stockpot of water, peeled potatoes, and salt to a boil, then reduce heat to low. After 20 minutes or until fork tender, rinse the potatoes while saving 14 cup of the hot water
  2. Return the potatoes and water to the stockpot and begin mashing the potatoes
  3. Once the potatoes are almost mashed, pour in the melted butter, heavy cream, and sour cream, and continue mashing until your desired smoothness is achieved (I love tiny pieces of potatoes, but you may mash or even whip till smooth if you want
  4. ). Taste and season with salt and pepper to your liking

  5. Taste and season with salt and pepper to your liking.

Notes

  • When 1 tablespoon tomato paste is added to the beef mixture while it is cooking, it creates a richer flavor that many people like. However, while this isn’t typically featured in shepherd’s pie, I do include it as an optional ingredient for those who wish to add a bit extra flavor to their combination. It’s OK to dice your potatoes after peeling them if you want to shorten the cooking time for your potatoes
  • This will make the pieces smaller and cook faster. Use the cast iron skillet that you used to fry the meat as a baking dish for the casserole to save time on the dish-washing front. Toss the potatoes on top and bake in the oven for 30 minutes.
