  • 14 teaspoon powdered nutmeg
  • 1 cup cooked white wine
  • Kosher salt and freshly ground pepper to taste

  • 1 cup cooked frozen peas 1-egg mixture whisked together with a spoonful of milk

Add the butter, chicken stock, sage, salt, and pepper to the same saucepan and heat through. Cook, covered, over medium heat for approximately 10 minutes, or until the liquid is reduced. Combine the wine, milk, cream, flour, thyme, and nutmeg in a large mixing bowl. Cook for 5-10 minutes, or until the sauce has thickened. Taste and season with additional salt and pepper if necessary. Remove the pan from the heat
  4. Remove the sage sprigs from the arrangement. Combine the cooked veggies, chicken, and frozen peas in the saucepan until everything is well-combined and heated through. Taste and season with additional salt and pepper if required. Divide the mixture among four ramekins coated with a pie crust. Place the remaining crust circles on top of the filling and crimp the edges together to seal. Egg wash should be applied to the tops of each of the cupcakes. Preheat the oven to 200°F and bake for 20-25 minutes, until the top is golden brown.
