The raspberries used in our Framboise come from the idyllic Washington town of Mount Vernon. Mike and Jean’s Berry Farm, which overlooks the Pacific Ocean and the spectacular Mount Baker, provides us with our raspberries for Pacific Rim. The raspberry clone, or variant, is cultivated solely for the Pacific Rim region of the world. Framboise- The Morrison kind of raspberry is distinguished by its moderate bitterness and plenty of tastes, which make it a superior fruit. When served on its own or as an accompaniment to any dessert, framboise is unrivaled.
We highly advise you to experiment with Framboise-savor on its own, or to pour freely over your favorite dessert (chocolate cake and cheesecake both respond well to this flavor), or to combine it into your favorite drink (Framboise enhances all manner of cocktails).
Framboise may even be used as a filler component in some of the most extravagant dessert dishes you can think of.

Cooking with Framboise ~ Pacific Rim Wine Company
Greetings, foodies! I hope you all had a wonderful Thanksgiving dinner and spent quality time with your families. Wine, chocolate, and flourless cake are the topics of discussion in today’s article. Wine and chocolate are perhaps my two favorite (and most wicked) things in the world! This flourless cake is wonderfully delectable, and it is also gluten-free, as I will explain below. But first, let’s speak about wine, shall we? If the possibility to cooperate with a wine business presents itself, I leap at the chance, especially when it includes Framboise, which happens to be my all-time favorite cocktail.
- Pacific Rim Wines was founded in 1992 by Randall Grahm of Bonny Doon Vineyard, who is also the owner of Bonny Doon Vineyard.
- They built a magnificent winery in Washington with a small group of professionals who were driven by the desire to produce the greatest riesling possible in the Pacific North West region.
- This framboise is packed with raspberry flavors and flowery scents, making it a delightful treat!
- This wine goes exceptionally well with chocolate, particularly chocolate cake.

- 12 tablespoons unsalted butter at room temperature
- 12 ounces bittersweet semisweet chocolate chips
- 1/2 cup unsweetened cocoa powder
- 5 tablespoons Pacific Rim Wine Framboise
- 2 teaspoons vanilla extract
- 5 eggs at room temperature
- 1/2 cup organic sugar
- 1 pinch pink Himalayan sea salt
- Powdered sugar and raspberries to garnish
- 1/2 cup un
Method:
- Preheat the oven to 350 degrees Fahrenheit (182 degrees Celsius). Place a piece of parchment paper in the bottom of a large springform pan and gently oil the parchment paper with butter. If the cake doesn’t stick, this will prevent it from sticking. In a double boiler, melt the chocolate and butter together over medium-high heat, stirring constantly. Check to see that the ingredients are well blended, then remove from the heat and set aside to cool. While the chocolate is cooling, prepare the remaining ingredients for the recipe. In a large mixing bowl, combine the eggs, sugar, salt, and vanilla extract. Beat the mixture until it is light yellow in color and has quadrupled in volume, about 3 minutes. Gently stir in the chocolate mixture into the egg mixture until everything is well-integrated. Fill the springform pan halfway with the batter. Place the pan on a large baking sheet and bake for 30-40 minutes, or until the cake is set. Remove the cake from the oven and lay it on a wire rack to cool. Remove from the oven and set aside to cool completely before serving with fresh fruit and powdered sugar on top.
