The chaptalization process is not new to me; this is the third port kit I’ve tried, so I’m familiar with the procedure. This kit, and I assume it was the yeast, never fermented strongly, or at the very least not as violently as my prior kits. I was disappointed. The EC-1118 was supposed to have a high tolerance, however it died out too soon. It never resumed after being stirred on a regular basis.

I followed the directions to the letter and maintained it in a room with a temperature in the upper 70s.
