Tokaj

For more than a thousand years, the Tokaj-Hegyalja region in northeast Hungary and southeast Slovakia has been credited with producing some of the world’s oldest botrytized wines, known as Tokaj or Tokaji Azs (which originally meant “dried” in Hungarian, though today it is almost exclusively associated with wines made from noble rot). Fog from the Tizsa and Bodrog rivers, which pass close by the slopes that bear Furmint, Hárslevel, and Yellow Muscat, Tokaj’s three principal grape varieties, blankets the hillsides in the early morning hours.

  1. The shriveled grapes are collected individually and stored in puttonyos, which are 20-liter buckets.
  2. As a rule of thumb, the number of puttonyos used has been inversely related to the sweetness level of Tokaji, with six puttonyos representing the highest sweetness level and five puttonyos representing the lowest sweetness level.
  3. Eszencia, the sweetest Tokaji, is made from the juice of azs berries that has been let to run free.
  4. Tokaj is traditionally served with foie gras (of which Hungary is the world’s biggest producer) or Hungarian crepes, among other things.
  5. The mouthwatering smells of apricot, bananas foster, beeswax, and pineapple upside-down cake are carried over to the palate with smooth transition.
  6. The texture is luscious, velvety, and sensual in the best possible way.
  7. Samuel Tinon’s full name is Samuel Tinon.

Austria

In Burgenland, which is located in Austria’s warmer eastern region, one body of water, Lake Neusiedl, gives ideal circumstances for the growth of botrytis. The tiny lake assures hazy mornings with sufficient moisture for the growth of botrytis to take place. The sweet wines produced by the villages that line its shores have long been renowned. In fact, the town of Rust utilized local sweet wine, known as ausbruch, to successfully negotiate with the Austrian emperor in order to obtain the title of free town in 1681.

  1. According to Schröck, the ideal types for creating completely botrytized ausbruch include late-ripening varieties such as Welschriesling and Furmint, which are known for their piquancy and acidity, as well as Pinot varietals, which are known for their creaminess.
  2. Spätlese and auslese styles are produced from grapes that have been less impacted by botrytis.
  3. TBAs are produced on the family estate by a variety of grapes, according to Gerhard Kracher, who manages the property.
  4. He claims that even the red grape Zweigelt produces delectable botrytized wines.
  5. Despite the fact that botrytis appears every year, he must wait for the perfect circumstances to emerge, which means harvest might occur at any time between October and December.
  6. Schröck suggests more experimental combinations, which she communicates via the use of her unique labels.
  7. “Other foods can be served with the wine depending on the acidity and character of the wine,” she explains.

“Ausbruch may even be used with peppered meat,” says the chef.

Around honeycomb and apricot jam, candied quince and mandarin peel create a swirling pattern of flavor.

Germany

The outstanding botrytized wines of Germany are characterized by a magnificent scent and luscious, sweet fruit that is balanced against electrifying acidity, thanks to the presence of edelfäule, as the malignant fungus is known in Germany. When it comes to botrytis-friendly varietals, Riesling is regarded the most noble due to its accuracy, rich aromatics, and complexity of fruit and spice, as well as mineral notes. Even though they are often light in body and alcohol, they can range from the racy, lime and slate-scented joys of the Mosel to the riper, more tropical Rieslings of the Rheingau, Nahe, and Pfalz regions of Germany.

  • Riesling, as well as varietals like as Silvaner and Rieslaner, are frequently used in the Franken area to produce wines that are more muscular while yet retaining a lovely herbaceous character.
  • Large bodies of water near to vineyards help to temper chilly, northerly climes, allowing grapes to develop over a longer growing season and increasing yields.
  • The use of procedures such as new oak fermentation and maturation (which modify smells and tastes) or malolactic fermentation (which rounds the palate and softens acidic edges) by German winemakers is often avoided in order to maintain primary fruit character and vivid acidity in their wines.
  • The botrytized Riesling is a traditional combination, according to Nicolas Pfaff, the winery’s export director, with delicacies such as foie gras.

According to Pfaff, he attended a wine supper in Bangkok that was “absolutely great.” Incorporating just spätlese, auslese, and beerenauslese wines (all of which have been concentrated in sweetness by botrytis) into a fragrant, sweet-and-spicy Thai meal resulted in a “fantastic burst of flavors,” according to the chef.

  • Iijima’s full name is Anna Lee C.
  • Robert Weil is a well-known author.
  • Riesling Trockenbeerenauslese (Rheingau); $775/375 ml, 98 points.
  • On the nose, there are layers of spicy saffron, peach, honey, and caramel.
  • Acidity that sends chills down your spine darts through a honeyed, waxy finish.
  • Loosen Bros.
  • Cellar Selection is an important step in the winemaking process.

Loire Valley

Botrytis is an uncommon disease, which adds to its appeal. Only two regions of the Loire Valley (which surrounds the Loire River, France’s longest river) have been designated as consistent enough to produce botrytized wine: the Layon River Valley (a Loire tributary) and Vouvray, which is located on the Loire. Layon River Valley is a tributary of the Loire, and Vouvray is located on the Loire. Both wines rely on thin-skinned Chenin Blanc, which manages to strike a delicate balance between crisp delicacy and excessive richness.

  1. Coteaux du Layon and village-designated Coteaux du Layon are two types of Coteaux du Layon.
  2. Vouvray, located 80 miles upriver, produces every kind of white wine from Chenin Blanc, which is a versatile grape.
  3. Visitors to the limestone caverns where the wines are housed will discover historic vintages that are still vibrant and alive, demonstrating how well these lavish gems can be kept for generations.
  4. Both locations are known for their luscious cream sauces made with local river fish, which are the perfect complement to the wines’ balance of richness and acidity.
  5. Château de Fesles 2011 Vin Rare (Bonnezeaux); $40/500 ml, 95 points; Château de Fesles 2011 Vin Rare (Bonnezeaux).
  6. Peaches and pineapples in their ripeness dominate the fruit character of this rich, exquisite wine’s bouquet.
  7. Advantage International.
  8. There are aromas of yellow fruit in this wine as well as an opulent honey and spice flavor.
  9. This wine is still quite young, so don’t expect to be able to enjoy it until 2022.
  10. Cellar Selection is an important step in the winemaking process.
  11. Wines from Bordeaux and the Southwest of France.

Bordeaux andSouthwest France

A beautiful mix of Sémillon and Sauvignon Blanc, Sauternes is founded in fluvial white-pebble and limestone outcrops that accentuate the charm of the wine. This region, which is to the south of the city of Bordeaux, is characterized by meandering roads, crumbling stone walls, and beautiful strongholds. The sweetness of the wine is attributed to the Ciron River, which meanders through the Landes and emerges from the pine trees. When the river flows into the adjacent Garonne river, it delivers moisture and mists from the October morning mists.

  1. It is on par with Sauternes in terms of the creation of exquisite botrytized wines, if not better.
  2. Together, these appellations produce some of the world’s most celebrated botrytized wines, including Yquem, Rieussec, Suduiraut, Climens, and Coutet, among others.
  3. For botrytized stones at a reasonable price, two appellations in the wider Southwest are worth exploring for reasonably priced botrytized gems that fly under the radar.
  4. For its botrytized wines, Gaillac, which is located on the Tarn River northeast of Toulousse, looks to Mauzac for supply.
  5. —Roger Voss et al.
  6. This beautifully ripe wine is well-balanced, with flavors of juicy yellow fruits, ripe oranges, and lemon bursting from the glass.
  7. The acidity adds a line of freshness towards the finish of the dish.
  8. Millesima USA.
  9. This is a great wine that is also ripe.

Alsace

Sauternes is founded in fluvial white-pebble and limestone outcrops, which accentuate the wonderful mix of Sémillon and Sauvignon Blanc in the vineyards of the region. It’s a country of twisting roads, crumbling stone walls, and imposing strongholds located south of the city of Bordeaux, France. Due to the flowing Ciron River that originates from the pine forests of the Landes, the wine has a pleasant sweetness to it. When the river flows into the adjacent Garonne river, it transports moisture and mists from the October mornings.

With regard to botrytized wines, it is on par with Sauternes in terms of quality.

As a group, these appellations produce some of the world’s best botrytized wines, such as Yquem, Suduiraut, Climens, and Coutet, among others.

Two appellations in the broader Southwest are worth exploring for botrytized jewels that are fairly priced but are not widely known.

For its botrytized wines, Gaillac, located on the Tarn River northeast of Toulousse, is reliant on Mauzac.

The following is an excerpt from Roger Voss: Barsac, Château Coutet 2011; $84, 96 points; Château Coutet 2011.

A contrast between the rich, thick structure of botrytis and the fruit is created by the fruit.

To be consumed by the year 2020.
