Fold the dough in thirds to make a triangle. Fold the triangle into thirds once more. Form the dough into a spherical ball by reshaping it. Transfer to a mixing bowl that has been gently greased. Allow the dough to rise until it has doubled in size, about 2 hours in a moderately warm, draft-free environment
• Poke the dough down a little with your fingertips. Transfer to a work surface that has been lightly floured. Make an even shape out of the dough by flattening it out. Using a bench scraper, divide the dough into 16 equal pieces. Prepare a baking sheet by lining it with a silicone baking mat. Form each piece of dough into a round ball and set aside. Distribute equally on the baking sheet that has been prepared. Allow for a 15-minute rise. To make the mixture, combine 1/4 cup water and 1/3 cup flour in a mixing bowl until the dough is thick enough to keep its shape but thin enough to pipe easily. Using a pastry bag, pipe a cross on top of each bun after it has risen for 15 minutes. Transfer mixture to a baking sheet. Allow the dough balls to rise for another 15 to 20 minutes, or until they have doubled in size. Preheat the oven to 425 degrees Fahrenheit (220 degrees Celsius). Place the pan in the preheated oven. Bake for 15 minutes, or until the top is golden brown. In a small saucepan over medium heat, combine 1/4 cup sugar and 3 tablespoons water. Bring the mixture to a simmer and cook until the sugar has dissolved and the sauce has begun to thicken, or until the temperature reaches 225 degrees F. Remove from heat and set buns on a cooling rack for 5 minutes before coating with icing sugar. To finish, gently brush glaze over the tops of the buns.
