Vintage 2002Tasted in January 2005 (2005) De Bortoli’s 2002 is an Australian classic, and it’s a particularly fine example of the full-on, rich Sauternes-style wine that they make. Added layers of toast and butterscotch give the nose a luscious edge, which is complimented by unctuous, creamy flavors of tropical fruit and honey that linger on the palate. The presence of a citrus tone helps to keep everything firmly focused. Upon tasting it, it envelopes the lips with a thick, rich texture as well as an overtly sweet marmalade flavor.

The aroma is dominated by cigar smoke, charred oak, and honey, with hints of spearmint and waxy exotic fruits developing, as well as deep, black fruit and notes of spearmint.

“The Riverina area, which frequently has a wet autumn, is prone to botrytis cinerea, sometimes known as noble rot, which is a fungal infection. Mold hyphae (filaments) shrivel the fruit as it grows, concentrating the liquid, increasing viscosity, and adding different flavors as it develops. Mold development requires roughly 10 hours of relative humidity for the spores to take hold. In the vicinity of Yenda and Bilbul, the vineyards are planted on medium to heavy clay loams and are managed to maintain a high level of humidity between the vines in order to stimulate the growth of botrytis.
The very viscous and delicious liquid is first settled before being fermented with yeasts that have been properly chosen.
The consistency has been outstanding, and the upcoming 1994 release will be one of the finest releases ever.
The De Bortoli sauternes stand alongside Penfolds Grange Hermitage, the great north-east Victorian fortified Muscats and tokays, the 20-year-old Lindeman’s semillons, the similarly aged Leo Buring Rhine rieslings, and the best Petaluma chardonnays as Australia’s greatest wine styles, according to me.

In 2006, Darren De Bortoli developed Noble One Botrytis Semillon at his family’s winery in Bilbul, New South Wales. Noble One Botrytis Semillon owes its complexity to the presence of Botrytis, often known as “Noble Rot.” De Bortoli’s distinctive style of sweet white wine has been established since the first vintage was released in 1982 by Darren and his winemaking team, who have perfected the art of producing wine from fragile, heavily botryised fruit into the distinctive De Bortoli style, which is widely regarded as Australia’s benchmark sweet white wine.

History
Italian immigrants Vittorio and Giuseppina De Bortoli started the De Bortoli Winery in 1928, which is now in its third generation. De Bortoli Wines is a third generation Australian family wine enterprise. Their son Deen (1936 – 2003) extended and solidified the firm, and today his offspring have built De Bortoli’s reputation for premium wine, which includes this signature dessert wine Noble One, as well as the company’s reputation for premium wine. Italian family values are fundamental; there is a culture of hard labor, generosity of spirit, and the sharing of excellent food, good wine, and good times with family and friends that has endured through the centuries.
Regional Information
The Riverina region has a mild Mediterranean climate with the majority of rainfall occurring during the winter months.
