The mixture should be flattened with your palm before being spread and shaped to form a round disc 4 inches wide and slightly more than 1/2 inch high if you are using a baking sheet. Using your fingers or knuckles, gently compact down the cauliflower mixture so that the crumbs of the cauliflower buns are tightly packed together. Sprinkle sesame seeds on top of the bread buns before baking for 20-25 minutes, or until the tops are golden and the cauliflower breads are fully cooked. To gently loosen the bottoms of the cauliflower breads, use a thin spatula to gently loosen them (I recommend using a good silicone cookie spatula which usually has a very thin edge that glides easily underneath.) Allow breads to cool for a few minutes before eating them.
- I use a muffin top pan*, but you can also use a freeform pan to make them. Cauliflower should be riced until it resembles coarse/large crumbs, then set aside to cool. Although 3 cups will be approximately 1/2 of a large head of cauliflower, measuring it out first is recommended

Bake for 10 minutes at 350 degrees Fahrenheit, then toss the pieces about to ensure equal cooking, then bake for another 10 minutes at that temperature. Allow the cauliflower to cool for a few minutes. Cheese cloth should be used to squeeze out any leftover liquid. You want to extract as much liquid as possible from the container. Preheat the oven to 425 degrees Fahrenheit. In a small mixing basin, whisk together the egg yolk and white until well combined. In a large mixing bowl, combine the cauliflower, egg, cheese, and herbs (for taste) and whisk until a paste forms. This will be the batter that you will use to make the bread. Prepare a baking sheet by lining it with parchment paper. Spray the parchment paper with a light coat of oil. Divide the paste into approximately 100g portions and distribute them equally on the baking pan. Form each pile into a flat, rustic square shape by pressing down on it with your fingers or a spoon. Each one is around 14 inches in thickness. If you use the paste as directed, you should be able to get approximately 6 pieces of squares. Place the squares equally over the baking sheet so that they are not too near to one another
- This will allow the cookies to bake more evenly. Placing the dish in the oven for 16-20 minutes, or until the “bread” pieces are golden brown, is the best method. Remove the tray from the oven and let the “breads” to cool. Patience is required in this situation. It is best not to move them while they are still hot as this may cause them to break apart
- After waiting patiently, take the cauliflower sandwich breads from the baking pans. If preferred, top with mozzarella cheese and broil until the cheese is melted.
